Saffron is one of Morocco’s top exports, although its only grown in a few areas throughout the country it’s sold in markets all over Morocco. Taliouine a small Moroccan village in the south of the country and the Ourika valley area which is located close to the Atlas Mountains near Marrakech are the two well-known areas where the saffron crocuses grow. Saffron is the stigma of the crocuses Statius flower, which there is plenty of in Morocco.

When you think of the colour of saffron you would think it to be orange in colour. However, the actual stigma of saffron is red in colour. Saffron is usually purchased as a powder, that can be used in various dishes, what a lot of people don’t know is that saffron is best for when it’s still in it’s natural form as red delicate threads.

Saffron has a distinct and authentic flavour that is sought after by many. real, and because of this and the fact it is harvested by hand as it is such a delicate task it is the worlds most expensive spice.
