Zaalouk - Moroccan Aubergine Salad


  • 5 medium-sized Aubergine
    2 chopped tomatoes
    1 teaspoon of cumin
    1 pinch of salt
    Red pepper
    Hot pepper (optional)
    3 tablespoons of olive oil
    6 cloves of garlic


  1. Wash and remove the skin of the aubergine, cut it into cubes
    Cook for 20 minutes in a pot full of salted boiling water
    Remove from heat and drain
  2. Prepare the sauce by mixing garlic, cumin, salt, olive oil, chopped parsley, red pepper
  3. Add the cooked aubergine, mix it with the prepared sauce, and simmer for 15 minutes, crushing the whole with a fork and leave on low heat while stirring
  4. It is necessary to dry the sauce of the water and to leave just the oil

Serve warm or cold with  bread. enjoy!
