  • 2 tablespoons olive oil
    1 onion, chopped
    2 chopped carrots
    2 peeled, chopped Potatoes
    2 Leeks
    Celery Branch
    1 teaspoon lemon juice
    ground black pepper to taste
    2 teaspoons olive oil (optional)
    3 tablespoons chopped fresh parsley
    1/2 teaspoon of salt
    1/4 teaspoon of pepper (spiced to be adjusted to taste)
    1.5 litre of water


  1. Peel, and cut the vegetables into pieces
  2. Add all the vegetables to a pan, add the parsley and celery
  3. Cook in 1.5 litres of water for 30 minutes on medium heat
  4. Once the vegetables are cooked, remove the bunch of parsley
  5. Put the soup in a food processor and puree until smooth. You can add water to thin the soup
  6. Add salt, and pepper
  7. Return pureed soup o the pot and cook for another 5 minutes without covering the pan. enjoy!
