Moroccan most popular cookies


  • 2 cups (250 grams) all-purpose flour
    1 cup margarine or 1 cup butter, softened at room temperature
    1 large free-range egg
    1⁄2 cup granulated sugar
    1 teaspoon baking powder
    1 tablespoon vanilla sugar or vanilla extract
    A pinch of salt

To decorate

  • 3⁄4 cup strawberry or apricot jam
    Powdered sugar ( optional)


  1. Preheat oven to 170°C
  2. Cream the margarine & sugar until light & fluffy. You can use the stand mixer or the flat paddle.
  3. Beat in the egg & vanilla, then gradually mix it with the flour, baking powder, pinch of salt
  4. Mix slowly until getting a soft dough forms
  5. The dough should be very soft and not sticky, you can sift in a little bit of the flour if the dough is still sticky
  6. Roll out to about 4mm thick using a rolling pin be sure to flour the rolling pin well. Make sure not be too thin or too thick (around 2-3 millimetres)
  7. Using a cooking cutter cut the cookies, the top and bottom
  8. Place the cookies on a baking tray and bake the cookies for around 10 minutes
  9. Once cooked, place the cookies on a tray to cool down
  10. Heat the jam until bubbling
  11. Put the strawberry jam on the cookies without the holes, top them with the cookies with the holes
  12. You can sprinkle icing sugar on top of the cookies ( optional). enjoy!
