Semolina Moroccan pan-fried bread


  • 350 g of fine semolina
    100 g melted butter
    150 ml of milk
    1 tablespoons of sugar
    1 tablesoon salt
    7 g of baking powder

For cooking:
2 tablespoons. fine semolina of durum wheat


  1. In a bowl, place the semolina, sugar, salt, baking powder
  2. Pour the melted butter use your hands and try to blend the semolina with the butter, make sure every grain of semolina is moistened
  3. Add the milk, mix well and let stand a few minutes so that the semolina absorbs the liquid
  4. let it completely absorb the milk (about 20 to 30 minutes depending on the quality of the semolina
  5. Heat a non-stick pan with a thick bottom, sprinkle with semolina and then take a ball of semolina paste and flatten it directly into the pan
  6. Let the harcha cook about 2 minutes before turning it with a spatula
  7. Once cooked and browned, remove it from the pan
    Serve the Harchas with jam, cheese or honey.enjoy!
