Tempting Spicy Lentils

Ingredients

  • 3 tablespoons olive oil
    1 red onion, chopped
    2 garlic cloves, minced
    2 large ripe tomatoes
    2 teaspoons tomato paste
    1 teaspoon ground cumin
    Salt and pepper
    1/2 teaspoon ground coriander seeds
    1/2 teaspoon turmeric
    1 teaspoon paprika powder
    2 dried bay leaves
    3 tablespoons fresh parsley
    3 tablespoons fresh coriander
    400g dried lentils, green (or brown), rinsed and drained
    Lemon slices

Method

  1. Place the lentils in a bowl, wash with cold water, then drain in a strainer
  2. Tip into a large saucepan and add 1-litre water, bring to boil. cook for 30 minutes
  3. While the lentils are cooking, warm the oil in a large saucepan over medium heat, add the onion and garlic and cook for 5 to 6 minutes until the onions are soft
  4. Add the spices and cook stirring occasionally
  5. Add the tomatoes, tomato paste, coriander, parsley and about 250 ml of water
  6. Combine well, then add the lentils
  7. Cover with a lid and cook over low heat for 25 to 30 minutes, until the lentils are tender
  8. Serve hot in a bowl, add some lemon slices and coriander on top as you like. enjoy!
