Honey Briout With Almond


Almond Filling

  • 500 g Ground Almond
  • 120g unsalted butter softened
  • 120 g icing sugar
  • 1/2 teaspoon natural Almond extract
  • 3 tablespoon orange flower water ( 1 spoon for the honey syrup)
  • Philo pastry sheets
  • 500 g Honey


  1. Blanch and peel the almonds – put them into boiling water for few minutes, drain them, and then pop the hot almonds out of their skins
  2. Fry the almond in oil until light to medium golden brown not too dark
  3. In a food processor, grind the fried almonds with about half of the sugar until the almonds form a moist paste
  4. Tip into a bowl and add the butter and stir until it melt
  5. Add the cinnamon, almond extract and orange flower water and mix throughly to a paste
  6. Shape all of the the almond paste into balls
  7. Place the philo pastry in a work surface
  8. Use a ruler and cut it into strips 12-14 cm
  9. Stack the strips and cover with a cloth to prevent them from drying out
  10. place a philo strip on a work surface, bruch it with melted butter
  11. Enclose the almond paste balls in strips of philo pastry and fold forming a  triangle shape
  12. Preheat the even to 180 degrees, do this after you completed all the triangles
  13.  Bake the briouats for 20- 30 minutes until golden
  14. After you ninish all the cooking, combine the honey with orange flower water, bring it to boil and then reduce the heat to low
  15. Dip the hot briouats in the honey for 20 seconds
  16. Remove it and place it on a tray. enjoy!
