Amlo is a rich mixture or spread that is made of roasted organic almonds, Argan oil and pure honey. It is a grat delicacy in Morocco especially in the south of the country. It is usually served during breakfast, on bread or as a filling to different traditional Moroccan bakery type foods such as Baghrir, Harsha Msamen, Malwi and Rziza or crepes.
To make Amlo you will need about 50 grams of whole almonds, five tablespoons of pure honey and about 350 millilitres of Argan oil, you may want to add or put less depending on the consistency that you prefer and the texture.
Pre heat the oven, while the oven is warming up rinse the almonds in water then leave to drain for a few minutes, then add the almonds onto a tray to place in the oven to roast for twenty minutes. While they are roasting occasionally check on them as they can burn easily, also give them a little shake to move them around a bit. Once they have completed roasting take them out and leave them to cool for about fifteen minutes. The next step is creating the paste, to do this place half of the almonds and Argan oil into a blender and pulse several times to get the mixture going, then add the remainder of the Argan oil and almonds blending them together until you get the perfect texture. Finally pour the blended almonds and Argan oil into a bowl, adding a table spoon of honey as you stir the mixture together.
